Chai Spiced Ginger Cake
Today I received my first parking ticket ever. I was parked outside my house. I am bitter about it.
Yes, I shouldn’t have been parked there, it was a single yellow line. Everyone else was doing it though, so I did too. Except when I found my car this morning with the yellow sticker of doom, he was all alone. Shamed.
Poor Colin. Yes, I named my car. Colin the Corsa.
Cue more comfort eating.
These yummy squares of cake were originally meant to be blondies, but they turned out really light and rose quite a lot. This works quite well for comfort eating, it means you can eat more!
Even if I couldn’t eat 4 squares in a sitting, the wonderful smell of these in the oven was enough to make me feel better. Dare I say it (because it’s only October), but they smelt like Christmas!
Cinnamon and ginger, coupled with vanilla chai is an amazing smell, you should all go and make them just for the aroma in your kitchen. I will definitely be making them again!
- 220g butter
- 200g brown sugar
- 90g white sugar
- 2 eggs
- 1tsp vanilla essence
- 270g plain flour
- 1tsp baking soda
- 1tsp cinnamon
- 1/4tsp allspice
- 2tsp ground ginger
- 1tbsp vanilla chai tea.
- Pre heat the oven to 180C.
- Line an 8 x 12 brownie pan.
- Cream the butter and sugar together.
- Mix in the eggs until combined.
- Sieve in the dry ingredients and mix in thoroughly.
- Pour into the tin.
- Bake for 20-25 minutes until firm to the touch.
- Leave to cool and then cut into squares.
