Chocolate Amaretto Cupcakes

The cupcake is dead.

Or is it?

Many people think the cupcake has had it’s day, and I used to be one of them. 

A good cupcake is all in the decoration, and there is only so much you can do to make them pretty without spending a fortune on glitter spray and little fondant decorations etc. Nobody needs to spend all that money for something that a houseful of  hungry people will demolish in seconds flat.

 

 

These cupcakes were absolutely delicious, but they needed something extra to become a pretty eye catching cupcake. 

I started jazzing up them up with raspberries. The contrast and flavour really worked. Who doesn’t love almond and raspberry together!? 

Alongside this, I was recently sent some lovely cupcake wrappers from Just Bake and so I decided to try them out.

 

 

Cute right? I don’t usually go in for cupcake wrappers, I see them as a little bit of a waste of time, since you only really get one use out of them.

So why do I like these ones? Because they’re reusable! That’s right, wipe them clean and use again and again. Now that’s the kind of cupcake wrapper I like!

I put the non decorated and the decorated cupcake side by side, so you can decide which you prefer.

 No matter how pretty the outside of a cupcake is, it has to taste good too. These certainly hit the spot. I think a touch of alcohol makes everything taste better!

 

Chocolate Amaretto Cupcakes

Ingredients
  1. Chocolate Almond Cupcakes
  2. 100g butter
  3. 100g caster sugar
  4. 1 tbsp amaretto or almond essence
  5. 2 large eggs
  6. 90g plain flour
  7. 3tbsp cocoa
  8. 1 tsp baking powder
  9. Chocolate Amaretto Buttercream
  10. 150g butter
  11. 290g icing sugar
  12. 3 tbsp cocoa
  13. 1tbsp amaretto
Instructions
  1. Chocolate Almond Cupcakes
  2. Pre heat the oven to 180C and line a cupcake tray with 9 cupcake cases.
  3. Cream the butter, amaretto and sugar together until smooth.
  4. Beat in the eggs one at a time until combined fully.
  5. Sieve in the flour, cocoa and baking powder and combine.
  6. Divide between 9 cupcake cases.
  7. Bake for 8-10 minutes until firm to touch.
  8. Move to a wire cooling rack to cool.
  9. Chocolate Amaretto Buttercream
  10. Beat the butter with the amaretto until soft and creamy.
  11. Sieve and beat in the cocoa and icing sugar 1/4 at a time.
  12. One fully combined, pipe onto cooled cupcakes in your desired way.
