Salted Caramel Cashew Cookies #SundaySupper

This week’s #SundaySupper is all about crunchy goodness. When I first saw the title I had so many ideas! I could use a Crunchie bar and smush it into just about anything, but then I didn’t know if people would know what a Crunchie was. For those that don’t, it’s a bar of crunchy honeycomb coated in Cadbury’s chocolate and it’s teeth pulling out amazing. 



Then I thought I could use Crunchy Nut Conrflakes, a cereal by Kelloggs that I adore! I’ve been wanting to use it in a recipe for ages, but again I wasn’t sure if this was a cereal just limited to the UK. If it is, you guys are definitely missing out! 



In the end I decided on crunchy, gooey cookies, because who doesn’t like a cookie? If you don’t like cookies, we probably can’t be friends. Or maybe we could be, and I could force feed you cookies until you were normal again. 



 I love the idea of salty and sweet together, I always have done.  I liked it before it was cool.  I’m just that hipsters guys. Or not. When I was in Italy, they sold Milka chocolate with Ritz crackers in, something which I am dying to try out myself!

These cookies were the perfect combination for me, I used salted and roasted cashews for an extra flavour boost, but you could use plain if you don’t like them too salted. 



I was quite proud of myself this week, as I said in my last post, I recently moved house. The oven is different (like nuclear powered!), the kitchen is tiny and I couldn’t figure out where to photograph anything because I lost my trusty garden table.  But I do have a conservatory, and a kitchen side, and I did my best photographing. I’m proud with the results, mainly because they took me next to no time, and didn’t require much editing.




Salted Caramel Cashew Cookies
Yields 12

  1. 125g butter, softened
  2. 100g light brown soft sugar
  3. 100g caster sugar
  4. 1 egg, lightly beaten
  5. 1 tsp vanilla extract
  6. 225g plain flour
  7. 4-5 salted caramels cut into chunks (or salted caramel chunks if you can get them)
  8. 75g roasted and salted cashews, roughly broken
  1. Preheat the oven to 180°C
  2. Cream butter and sugars together.
  3. Mix in the egg and vanilla until combined
  4. Sift in the flour and mix well.
  5. Sprinkle in the caramels and cashews and roughly mix.
  6. Roll into small golf ball sized balls and place on a lined baking tray. Press down slightly on each one with the palm of your hand. Make so you give them plenty of space because they spread a lot!
  7. Bake for 7-9 minutes, depending on how gooey you want them.
