Spiced Honey Peach Muffins #SundaySupper

I’m sat here writing this post at 4am, half asleep and desperate for my head to hit the pillow. It really has just been one of those busy crazy weeks. I would never want to neglect my blog because of it though, so here I am, posting my honey peach muffins.



This week my boyfriend has been finishing his dissertation, I am moving out of my room in the shared house I live in to go back to university and we are going on holiday. All these things come at once. Tomorrow I will have to be packed and out of room, packed and on the way to the airport, and picking up my boyfriend from University so he can hand in his dissertation. Not to mention driving my car 45 minutes away, so it can be service whilst I’m away. All of this before 12pm tomorrow, when we need to go to the airport. 




I am lucky enough to be going to Italy! I really need to get more excited but I’m just too tired. I know lots of people will be having exciting weekends because it’s labor day. That is the theme of this weeks #SundaySupper. 

If I’m honest I didn’t know what labor day was before now, and I’m still a bit unsure, but many people say it is the unofficially start of autumn. This is what makes these muffins absolutely perfect for a labor day celebration.




Easy to transport and keep well for bbqs and picnics, and mixing the flavours of autumn and summer. The last of the summer peaches with warming cinnamon and brown sugar.

Spiced Honey Peach Muffins
Yields 12
Write a review
  1. 290g plain flour
  2. 2 tsp baking powder
  3. 200g soft light brown sugar (plus extra for tops)
  4. 1 tsp cinnamon
  5. 1/2 tsp all spice
  6. 1 egg
  7. 1 tbsp honey
  8. 100ml sunflower oil
  9. 130ml milk
  10. 2 peaches diced (skin on)
  1. Pre heat the oven to 180C.
  2. Mix all the dry ingredient together in a large bowl.
  3. Mix the wet ingredients into this. Mix until combined but do no overbeat.
  4. Carefully fold in peaches.
  5. Divide between muffin cases and top each one with a little brown sugar.
  6. Bake for 20 minutes until golden brown and firm.
